    Ordered the knife set with block for my daughter’s Christmas. Very impressed with knives and block!! Fast shipping!! I have owned Old Hickory knives for 40+years and there is no better knife made!! They stay sharp and just like you read about them easily sharpened with a steel. Very satisfied with Old Hickory!! Definitely recommend to anyone looking to purchase a excellent knife!!

    Old Hickory 5 Knife Block Set

    I'm very happy my knives are American made and are carbon rather than stainless steel. I'd never have purchased them otherwise. The actual quality of the finish work needs improvement. The tang of one paring knife is off center and not parallel to the handle. Not one of the five has a smooth handle. Due to splinters, I needed to sand all of the handles.

    There never was a good knife made of bad steel. As I’ve been mastering the art of sharpening knives over the past several years, I have come to the conclusion that the austenitic stainless steels (300 series) are not worth the value because they dull so quickly and require frequent repair. Even the martensitic stainless steels (400 series) can be disappointing if they weren’t hardened properly. That’s why I switched to OKC for all of my knife needs. The high-carbon steels they use are ideally suited and hold an edge marvelously!

    Old Hickory knives

    These knives sharpen well on whetstones and feel great, however the edge on almost all of the knives was extremely inconsistent out of the box. These knives also stain very easily, almost immediately when handling food. I personally do not mind the staining on the blades and I love the look of the knife designs (reminds me of my grandmas kitchen). If these came with more consistent edges this would probably be a 5 star review, but they certainly need some time to be honed.
